Inspired by red vinegar from the Edo period (1603-1867), this item is produced using aged sake lees(a by-product of sakebrewing) and the traditional static fermentation process to reproduce the red vinegar of that time. Using just Japanese sugar and salt, it is a slightly sweet and traditional Edomae sushi vinegar.
